Home Network Plans

Going to document this here, hoping to get some good insight in the planning stages. Fiber is still a few months out, but I'd like to have this planned out so that it can be implemented at the same time fiber goes in.

The idea: I'm looking to create a network throughout the farm that would allow me to access any device from any location and "act like" one wireless network when it comes to inter-connectivity.

Goals:
-Be able to access files and/or devices from anywhere in and out of network.
-Home version of Dropbox file sharing for remote download/access of large files.
-Be able to set up a camera in the shop, and it record to a drive in the house with remote access online.
-Live stream cameras in the barn online.
-Remote control and monitor a "connected" house/barn/shop.
-"One network" to allow streaming media from one location to the other via iTunes.
-Provide limited network availability to "rental" in the future.

Current State:
-Internet comes in through ISP's wireless bridge on shop and goes out to house/barn through personal wireless bridge.
-Using wirless bridges to jump between buildings. No issues with them to date.
-Router in each building
-Three different networks
-CCTV system in the shop for security
-IP cameras in Barn for live updates (no backups currently)

Any thoughts?
What am I missing?
Is what I'm proposing possible?
Does a server make sense?
